This Creamy Tuscan Chicken is a rich, flavorful, and high-protein dinner that’s low in carbs and full of comforting goodness. Juicy chicken breast is smothered in a garlic-Parmesan cream sauce with sun-dried tomatoes and spinach, then served over fluffy cauliflower rice for a satisfying, mom-friendly meal.


Ingredients


For the Chicken:

• 2 (6 oz) boneless, skinless chicken breasts

• 1 tbsp olive oil

• ½ tsp garlic powder

• ½ tsp Italian seasoning

• ¼ tsp salt

• ¼ tsp black pepper


For the Cream Sauce:

• ½ tbsp olive oil

• 2 cloves garlic, minced

• ⅓ cup sun-dried tomatoes (packed in oil, drained & chopped)

• 1 cup unsweetened almond milk or low-fat milk

• ¼ cup grated Parmesan cheese

• 1 tbsp plain Greek yogurt

• 2 cups fresh spinach


For the Base:

• 2 cups cauliflower rice, steamed

• ½ tsp garlic powder

• Salt & pepper to taste


Instructions

1. Cook the Chicken:

• Season chicken with garlic powder, Italian seasoning, salt, and pepper.

• Heat olive oil in a skillet over medium heat.

• Sear chicken for 6–7 minutes per side, until golden and cooked through. Set aside.

2. Make the Cream Sauce:

• In the same pan, heat ½ tbsp olive oil and sauté garlic and sun-dried tomatoes for 1 minute.

• Add almond milk and simmer. Stir in Parmesan and Greek yogurt until creamy.

• Add spinach and cook until wilted.

3. Combine:

• Return chicken to the pan, spoon sauce over top, and simmer 2–3 minutes to heat through.

4. Prepare the Cauliflower Rice:

• Steam or microwave cauliflower rice, then season with garlic powder, salt, and pepper.

5. Serve & Enjoy:

• Plate cauliflower rice, top with chicken, and spoon extra sauce over everything.
