Ingredients:

• 12 oz shrimp, peeled and deveined

• 2 medium zucchinis, spiralized

• 2 tbsp butter (or ghee)

• 3 cloves garlic, minced

• 1 tbsp lemon juice

• 1/2 tsp red pepper flakes (optional)

• Salt and pepper, to taste

• Fresh parsley, chopped (for garnish)


Instructions:

1. Heat a large skillet over medium heat and melt the butter.

2. Add the garlic and cook for 1-2 minutes, until fragrant.

3. Add the shrimp to the skillet, season with salt, pepper, and red pepper flakes (if using). Cook for about 2-3 minutes on each side, until the shrimp turn pink and are cooked through.

4. While the shrimp is cooking, spiralize the zucchinis and set aside.

5. Once the shrimp is done, remove from the skillet and set aside. In the same skillet, add the zucchini noodles. Toss them in the remaining garlic butter sauce for about 2-3 minutes until softened but still al dente.

6. Add the shrimp back into the skillet and toss everything together.

7. Squeeze lemon juice over the shrimp and zucchini noodles, then garnish with fresh parsley.

8. Serve immediately and enjoy!
