Introduction


This Teriyaki Beef & Veggie Stir-Fry is a quick, high-protein dinner packed with flavor and nutrients. With tender beef, crisp vegetables, and a sugar-free teriyaki glaze, it’s a perfect meal for busy moms who need a nutritious, satisfying dinner in minutes!


Ingredients

• 1.5 lbs flank steak or sirloin, thinly sliced

• 1 tbsp olive oil

• 1 red bell pepper, sliced

• 1 cup broccoli florets

• 1 small zucchini, sliced

• 1 carrot, julienned

• 2 green onions, chopped (for garnish)

• 1 tsp sesame seeds (optional)


For the Teriyaki Sauce:

• ¼ cup low-sodium soy sauce or coconut aminos

• 1 tbsp sugar-free maple syrup or honey substitute

• 1 tsp sesame oil

• 2 cloves garlic, minced

• 1 tsp fresh ginger, grated

• 1 tsp cornstarch mixed with 2 tbsp water (for thickening)


Instructions

1. Prepare the Sauce:In a bowl, whisk together soy sauce, sugar-free maple syrup, sesame oil, garlic, and ginger. Set aside.

2. Cook the Beef:Heat olive oilin a large skillet over medium-high heat. Add sliced beefand cook for 2-3 minutes per sideuntil browned. Remove from the skillet and set aside.

3. Stir-Fry the Veggies:In the same skillet, add bell pepper, broccoli, zucchini, and carrot. Sauté for 5 minutesuntil tender-crisp.

4. Combine & Simmer:Return the beef to the skillet, pour in the teriyaki sauce, and stir well. Add the cornstarch mixture and simmer for 2 minutesuntil thickened.

5. Serve & Enjoy:Garnish with green onions and sesame seeds. Serve on its own or over cauliflower rice or quinoafor a balanced meal.
